Chocolate Cherry Cake

YUM! This was absolutely delicious and a total hit at my moms birthday dinner.  This year I volunteered to make the cake because I love to bake, however I wanted to try something new.  So I did some hard core stalking on the internet for some unique cake recipes. Then, I found this recipe and tweaked it a bit to make a delicious chocolate cherry cake.


Chocolate Cherry Cake

21 oz can cherry pie filling
¼ cup sour cream
3 eggs
1 teaspoon vanilla
Store bought Devil’s Food Cake mix
1/4 teaspoon baking soda

Cherry Frosting

8 oz cream cheese
½ cup softened butter
3 cups powdered sugar
1 teaspoon vanilla
1/2 cup frozen cherries thawed 

To make the cake:

1. Preheat oven to 350 degrees
2. Puree cherry pie filling and sour cream
3. Beat together eggs, vanilla, and puree
4. Add Devil’s food mix and baking soda
5. Fill cake tins and bake for the amount of time stated on cake mix box

To make the frosting:

1. Beat cream cheese and butter
2. Puree frozen cherries
3. Add powdered sugar, vanilla, and cherry puree
*I adjusted the consistency of the frosting by adding powdered sugar, then lined the cake with more cherries.
