Classic Crumb Cake

Over here in the Tri-State area, we have been buried in snow for what seems to be forever.  Once the snow is shoveled and the ice finally begins to melt, the snow just decides to keep on comin back.  Seriously, what is up with this weather? 

Trying to save myself from another diagnosis of cabin fever, I picked up my Martha Stewart’s Cakes cookbook and began to bake away. (Obviously, the only solution).  Anyway, now that we got the snow drama out of the way, let me tell you about this crumb cake.

I like crumb cake but it is not normally my first choice of yummy treats- put ice cream in front of me and the crumb cake normally doesn’t stand a chance.  BUT, this recipe was sooo good that, unfortunately, I must admit that I ate it for breakfast and dessert.  Yeah, that good.

I also would like to mention that I didn’t use cake flour.  I had a ton of all-purpose flour already in my house and wanted to use it up.  So if you have all purpose flour in the kitchen, it is totally fine for this recipe as long as you use the conversion:  1 cup of cake flour = 1 cup of all-purpose minus 2 tablespoons (1 cup – 2 tbsp).  Now you have a cake flour equivalent without having to go out and buy it, voilà!  Enjoy!

I cannot wait to share my July beauty faves with you this month. My first beauty fave is 1) Secret Scent Expressions Deodorant in the scent Ooh-la-la Lavender. This has been my favorite deodorant for years and it’s such a fresh scent for the summer time. Next, 2) Ben Nye Banana Luxury Powder. I happened to stumble upon this makeup a few months ago, and have been using it ever since.  Since the powder is “banana” tinted it is outstanding at covering up dark under eye circles. I like to use my concealer then dab on a little Ben Nye with a damp beauty sponge on top to set it.  It is very affordable for this type of product and the little 1.5 oz container lasts a very long time.

Next, I would love to introduce you to 3) Victora’s Secret Island Escape Body Lotion. When you apply this lotion it smells like you just came back from an island with its beachy coconut and sugar cane notes.  As always, I try to throw in one of my favorite nail colors of the month that inspire me. This month it is 4) Essie in “Canyon Coral.”  This Essie color is definitely one of my new favorites because it is an ideal summer coral and perfect coral colors are hard to fine.

Since the summer is the time to release our golden goddesses from within, it is nice to pamper your skin with a natural glow.  5) MAC Bronzing Powder in Refined Golden is perfect to enhance your skin with a little golden color. This month I saved my all time favorite beauty find for last, 6) MAC Mascara “In Extreme Dimension Lash.” This stuff is AMAZING. I am not lying when I say this is one of my favorite mascaras I have ever tried. It does not flake or smudge and it lengthens and thickens lashes. Who can ask for anything better?

Frozen Nutella Hot Chocolate

If there is Nutella in my house it doesn’t seem to last even a week. As you may have seen from my other posts or to just simply quote the frank’s red hot sauce lady, “I put that sh*t on everything.”   I try not to keep it in the house because every time I walk into the kitchen I seem to grab a spoonful.

I really love the taste of hot-chocolate but it tends to lose its luster when the summer months come around.  Frozen hot chocolate , if you haven’t tried it, is a funny thing.  I know the first time I tried it I was just expecting a typical chocolate milkshake… but no.  It is totally different; it tastes just like hot chocolate but an icy version.  So anyway, this week I decided to attempt my own version of frozen hot chocolate (or what I like to call a Fro-ho).  Nutella happened to be in the house and before anyone could stop me Nutella ended up in the blender.  These frozen Nutella hot chocolates makes for an amazing spur-of the moment summer treat.

 

Per Serving: Calories {206} Total Fat {10 g} Protein {6 g}

Ingredients:

Frozen Nutella Hot Chocolate

Makes 2 Fro-ho’s/Serving Size 1 Fro-ho

1 Cup Ice

1 Cup Milk

6 tablespoons Nutella

1 Packet instant hot chocolate

To make frozen hot chocolate:

1. Put all in a blender until it reaches a smooth consistency

Here are my beauty faves for the month of April!  Let’s start with 1) Prime Time Foundation Primer by Bare Minerals.  I find its absolutely necessary to apply this stuff before my foundation. It holds the foundation longer and gives your skin an allover even texture.  The best part is it is SO smooth and goes on like silk. 2) Another face favorite this month is the one and only HD High Definition Powder which goes on after you apply your foundation.  It gives your skin an even texture and sexy matte finish.  I like to use the Prime Time  –> Foundation –> HD powder for a foundation sandwich.  I would also like to mention that I have very very very sensitive skin but these two face products do not break me out so I loveeeee to brag about them! 3) Bath and Body Works Eucalyptus Mint Body Lotion is AMAZE. Not only does it smell like heaven, I am always sure to get a compliment of how nice it smells when I wear it. 4) Let me start by admitting that, as some of you may know, I have an Essie addiction.  This one in particular is called Wild Thing and has some glitter for bits of sparkle. I put this dark nail color in because sometimes I like to break up the springy colors with a nice deep color. I tend to think if paired correctly it can be a wonderful compliment  5) Finally, the Coco Mademoiselle Body Mist! I really like this body mist version of the perfume because it’s much more subtle  than the actual perfume,  making it more day friendly. Have any April favorites? Lucky Charm Krispies

My grad school finals slowly crept up on me and now I am in total cram mode.  There is nothing worse than sitting down and studying for hours for days upon days. Luckily for me, Saint Patrick’s Day is coming up and in my mind it was a justified reason for a study break.

So I took it upon myself to surrender the books and head to the kitchen. Now, my time was relatively limited, I accepted the idea that I could not immerse myself in new recipes and experiment the way I normally like to do because my books were calling.  Then an amazing idea came to me… why not do rice krispies? They don’t require an oven and only require 3 ingredients.

Rice Krispies are fun to make, you get to play with your food, mold the little sugary bits of heaven into any shape you like, and lick the melted marshmallow off your fingers. But I couldn’t make just regular Rice Krispies, it’s Saint Patrick’s Day season! So I figured, why not go wild and use my favorite childhood sugary cereal of all time instead? Lucky Charms soon landed on the kitchen island and I was off on a journey to make Lucky Charm Krispies.

Ingredients:

Lucky Charm Krispies

3 tablespoons butter

4 cups of mini marshmallows

6 cups of Lucky Charms

Glaze

1 cup confectioners sugar

1 tablespoon of water

1/2 teaspoon vanilla extract

Green Food Coloring

To make the Lucky Charm Krispies:

1. In a large saucepan heat butter and marshmallows over a low flame until completely melted
2. Remove from heat and stir in Lucky Charms until evenly coated
3. Using a buttered spatula  press the Lucky Charm marshmallow mixture into a greased baking pan (I used a 13×9 pan)
4. Let cool
5. Cut out clover shapes with a cookie cutter and set aside
6. Next, make a mixture of confectioners sugar, water, vanilla, and green food coloring until smooth. You may have to add more or less water to make the consistency just right.
7. Top with additional sprinkles and let set for one hour.
*I didn’t have a clover cookie cutter on hand, so  I used three mini hearts instead. Then I used a lollipop stick to assemble them into cute clover pops!

Le Bakers Dozen

Le Bakers Dozen in Montclair New Jersey is a wonderful bakery started by an amazing mother-daughter dyad. Their sweets are delish, made from natural ingredients, and baked fresh everyday.

I was never really a scone girl before Le Bakers Dozen came around.  I’m not sure if I wasn’t introduced properly or if I just never met a scone I liked. But, I really really really enjoy Le Bakers scones. Look how amazing they are! I strongly encourage you try them out. Where are your favorite scones from?!

In the spirit of St. Patrick’s Day coming up I chose my top green colored  beauty items of the month!  Let’s start with 1) Biore Face Strips which are great at deep cleaning your pores and even diminish them in size too. WOW, talk about instant gratification.  Next comes 2) Essie nail polish in “Da Bush” which seemed to come out a different shade of green in the picture than it is in person, but anyway definitely check it out because it is a great spring color. My next pick of the month is 3) Not Your Mothers dry shampoo. I have tried my fair share of dry shampoos and this one is one of my favorites. It gives great volume and doesn’t make my brunette hair white! Last but definitely not least comes 4) I Love Shea Foot Cream. This stuff is the cashmere of foot lotions and ultra-hydrates. What are your March favorites?!

Boston Bound!

I am SO excited! For Valentine’s day  my amazing bf is taking me on a  trip to BOSTON. I have never been and have wanted to go for so long. All I can say is that I am thrilled as ever.  Together we have compiled a list of suggestions from family and friends:

  • Walk to freedom trail (with the hopes its not buried in snow)
  • Boston Tea Party Museum (silly and interactive)
  • JFK Museum
  • Fenway Park tour (even though we are Yankee fans!)
  • Cheers Bar
  • Quincy Market

After our trip I’ll be posting all the gems we found. If you have any suggestions comment them our way! We would love to hear your fave spots so we can check them out.

Bite Me

This past weekend,  I was leaving a friends house and they handed me a box of heavenly cookies. They claimed that once I ate one I would forever be addicted. Boy, were they right.  Being the marinara blooded person that I am, I love Italian cookies (as you can tell from my Pizzelle recipe!) and pignoli’s are very high up on my favorite list.  I was so excited to try these powdered sugar covered gods that I opened the box on the car ride home and ate one… and that was the moment I became even more addicted to pignoli cookies.

These cookies are from Bite Me at Cucina 98 in Montclair, New Jersey. I have never personally been to the location but after I literally ate the whole box of cookies, I am sure I will make it over there sooner than later.  I highly HIGHLY recommend you head over there and buy some. If you don’t live close, I advise you convince Bite Me to deliver some to your door. You will NOT regret it, if anything you will regret not being able to muster up the self control to stop after eating just one cookie.

Italian Pizzelle Cookies

It is absolutely IMPOSSIBLE to go through a single Christmas season and not bake all of our traditional Italian Christmas cookies.  Because there are soooo many recipes and so many different types of cookies I decided to post only one of my absolute FAVORITES, Pizzelle Cookies. They require very few ingredients and are very easy to make. To be completely honest I have no idea how many this recipe makes, but all I know is that it looked like a TON. By the looks of it, and before I ate about half my body weight in Pizzelle’s, it seemed to be at least a couple dozen.

This is my family recipe so shhhhh! Its a secret, well not for long. Sorry mom…

Ingredients:

Italian Pizzelle Cookies

 3 1/4 Cups of flour
1 1/4 Cups of sugar
6 Eggs
4 Tsp Baking powder
1 Tbsp of Anise or Vanilla Extract
2 Sticks of butter room temperature
Powdered Sugar for Dusting
*Also need a Pizzelle griddle/waffle iron

To make the Pizzelles:

1. Preheat waffle iron
2. Beat eggs, sugar, and butter together
3. Add Anise or Vanilla Extract
4. Gradually mix in flour and baking powder until a dough forms
5. Drop about a Tbsp of dough onto each griddle. Once the steam subsides and they look a golden color they are ready to come off. (Every year we use a knife to pluck them off the griddle.  You may also have to spray PAM so they don’t stick. We don’t because ours tend not get stuck to our iron)
6. Since the dough tends to spill over a little you can use a pizza cutter, like we do, to trim the edges so they look nice and neat.
6. Place on cooling rack.
7. Once completely cool dust with some powdered sugar!

When the Pizzelle’s are cooled and coated with a dusting of powdered sugar we like to stack them, with doiles in between each one, wrap them with cellophane, and pass them out to our family and friends.  Not only do they look beautiful, they taste delicious too! Here is the picture of the final product before we passed them out! Enjoy!
